Sweet Chilli Sauce

This is one of the easiest recipes that I have made in the Thermomix.  I originally used to make it on the stovetop and have converted the recipe.

SWEET CHILLI SAUCE

Ingredients:
125g whole red fresh chillies (stalks removed)
250g sultanas
4 teaspoons of fresh ginger (cut in small chunks)
8 cloves of garlic
2 teaspoons salt
1 ½ cups white vinegar (360g)
3 cups of raw sugar (610g)
1 cup of water (250g)

Method
Place all ingredients into TM bowl and process on speed 8 for 20 seconds.  Cook for 10 minutes on Varoma on speed 2.  Scrape sides and cook for a further 40 minutes on 100c on speed 3.

Pour into sterilized bottles and seal.

General Tips
You can thicken this sauce by increasing the cooking time or make it 'chunkier' looking by decreasing the initial processing time.

I have bottled it and it has always lasted 6 months, but I am sure it would last longer (if i could keep my husband away from it:)

My SIL loves this stuff so I am going to make up a batch for him (and keep a little bit for myself).  Which chillies do you use, the small hot ones or the longer ones? He likes hot but I'm not that adventurous.

I use the longer chunkier ones.  They are not super hot.  You could always modify the amount of chilli to required taste.  The original recipe given to me had 250g of seeded chilli.  I am super lazy and find it easier to process whole, halve the chilli and waste less:)

Thanks TC - this is great.  Did you know that there are more bottles of sweet chilli sauce sold in the world than bottles of soy sauce?  Somebody who should know told me last week.

Just re-read this recipe TC and again, with the vinegar - anything specific or just plain white vinegar.  Funny, SIL hates sultanas but after the first step, he won't even know they are in there  :D :D :D :D

I have used white and brown and both have worked out fine.  I buy the basic homebrand vinegar and according to the ingredients the only difference between the two is some colouring added.  I now only buy white.

TC when I first read this I thought 'oh, I'll have to leave the sultanas out'. Then I read on and of course I won't. My family are a bit funny with sultanas, only have them in seet things.
Thanks for all these recipes as they are things most of us use a lot.
May all dairy items in your fridge be of questionable vintage.

I've clipped this recipe to Evernote to give it a try, rather than Cyndi O'Meara's recipe next time, and see which we prefer.  Thanks.

I have some opened chilli sauce in the fridge and the sealed stuff in the cupboard.  I haven't notice any spoiling.

I made this for Christmas hampers and forgot to review.

It is sooooo delicious, it got the biggest rave out of everything I made. We love it here. :D

I'm so glad you enjoyed it.  It is so easy, I have made it for a fete stall and everyone thought I was fabulous...I had to tell them my little secret of owning a Thermomix.

You have made it on the stovetop (before Thermie), but the colour it keeps in the Thermomix is much brighter.

What is the measure of yours!
And by the way - do I not take of the seeds of the Peppers???

isi, our cup measures 250ml and our tablespoons equal 20ml (4 tsp)   :)
