I'm about to finally strip the remains of my broad beans from the garden today and wondered what quick recipe I could make with them - this one won the prize.  Looking forward to trying it out for dinner tonight.

Travelling with someone who is a bit of a fussy eater can be difficult, MF.  A couple of years ago my cousin's daughter and her friend were in Melbourne visiting us (they are from Glasgow).  I took them down to St Kilda market on the Sunday and the only place they wanted to eat was at Subway!  Until then I had never been inside that chain of restaurants - and I've got to say, I have never been back.  Hope you managed to steer your mum to somewhere nice.

Gosh Amy, I had forgotten all about this recipe, thanks for bumping it.  Glad it turned out well for you in the end.

I've got to be honest, I never did get around to making it, but now that you have reminded me of it I think I will give it a go, probably over Xmas break.

From looking at the recipe now, it looks like the only tweak I would make would be to make the topping part first and set it aside before making the rest of the mix.

I am a hard copy person - but the ebook works well - I printed it off, put it into plastic sleeves and clipped them together to make a 'book' - albeit a bit floppy as I didn't put hard covers on it. 

I have also been feeling a bit guilty about a comment I made at the beginning of this thread, when I offered to run off a copy for Chookie - on reading it afterwards it appeared that I was offering to run off a 'pirated' copy from my purchased book.  That wasn't the intention at all, I just hadn't thought through the whole process of Chookie getting me a copy of her downloaded book then me printing it off ... oh, I am getting in a right muddle here, aren't I.  This explanation is probably making everything worse and even more convoluted and confused.  I'll stop now before I drive everyone nuts.

I haven't seen these recipes yet (just about to buy the book) but in most recipes that contain dairy you can easily substitute Nuttelex for butter, soy or nut milks for milk and soy or tofu "not cream cheese" for cream or sour cream. The taste and texture remains very similar. The only thing difficult to substitute is hard cheeses like Parmesan or Cheddar or Feta etc.
These substitutes work in Tenina's other recipes.
I hope this makes more of these recipes available to you.


Thanks for that…I use coconut cream or milk as a replacement for a lot of dairy…so hoping you can do that as well. It almost works in  the same manner.

Thank you both, I have just started using Nuttelex, still need to expand into other substitutes for cream, etc.  Looking forward to giving them a go.

Beautiful photos, MF.  I had forgotten how beautiful the countryside down there was.  Have you ever been to Lake Tekapo in the MacKenzie Country?  The lake reflections there are absolutely spectacular.

Just downloaded this book - the recipes look so tempring and delicious.  Sadly, most of them contain dairy products and I cannot use dairy - hopefully I will get hit by inspiration and will be able to make substitutes - I think there will be a lot of experimenting (and tasting) going on over the Xmas period - oh my poor waistline ... I can't wait!

I still haven't posted my present - I'd better get on to that before I am the last one to send and my poor recipient will be wondering when (or if) he / she is ever getting her / his present!!!
