CURRIED PASTA SALAD
Makes a big bowl - great for taking to a barbie
1200g boiling water
200g small spiral pasta (extra 1 – 2 tsp curry powder for cooking)
Pinch salt
1 stick celery, cut into chunks
¼ med red capsicum, cut into big chunks
¼ med green capsicum, cut into big chunks
1 Granny Smith apple, unpeeled, cored & cut into eighths (I used pink lady)
1-2 spring onions, cut into chunks (depending on size – use both the onion and the green stems)
small tin pineapple pieces in syrup, drained, reserving the syrup*
handful sultanas (or to taste)
handful roasted unsalted peanuts
Dressing
2/3 cup mayo
1/3 cup of reserved pineapple syrup
1 – 2 tblsp curry powder
Place boiling water into TM bowl. Add 1-2 tsp curry powder and salt to the water.
Weigh in pasta and cook for 11 mins/100°C/reverse + speed soft.(when it first starts off, turn speed up to about 3 just to combine the curry and salt into the water, then turn down to soft speed and carry on cooking. (check times of your particular pasta on the bag).
Drain into a colander, but don’t rinse. Let cool a little and then place in a large bowl.
Add half of the dressing and as much of the drained pineapple as you like.
Cover and place in the fridge to cool.
Prepare rest of ingredients, by placing all the veg including the apple (but not sultanas or peanuts), into the TM bowl. Chop for 2-3 seconds/speed 5 until cut small. Remove from the bowl and put to one side until ready to add to the salad. If you find there’s some liquid drained from the veg after sitting for a little while, drain in a sieve before adding to the pasta.
When pasta has cooled, add prepared veg and the sultanas and nuts. Give a good stir, adding more dressing if a little dry and then place in a serving bowl.
Notes:
* Don't be tempted to use pineapple in natural juice, you need the sweetness of the syrup to contrast with the curry flavour.
This can be made on the day although the flavour is even better the day after.
Can up the amount of the veg if you like of course. :)

rubyslippers - I ended up making it. I didn't mind it (it would have gone better with a BBQ rather than what I ate it with). The rest of my family didn't really go for it - so don't know that I'd make it again.

dede - We make this regularly and all love it. I change the ingredients slightly each time I make it depending what I have in the fridge. Its great as a side salad at home or at BBQ. If I am asked to bring a salad then I always make the pasta salad.

Jamberie - Like Kimmy, after hearing about everyone's rave reviews I just had to make this one too. I especially liked being able to chop the veggies whilst the pasta was cooking, I'm all for multi tasking.

Curried pasta salad has always been a fav - is there one in a WW cookbook - BBQs or Picnics?

There is indeed TMXer. I think I own almost every WW book printed. At the moment my big favourite is the yellow baking one.

Have TMX ever talked to WW about collaborating on a book? I am also addicted to their cook books. So spend my days with their books and my TM books open to cross reference ingredients and methods. I find the TM books not as easy or fool proof!

I am also a fan of WW cookbooks hopefulcook - never had a failure with them. I doubt very much if WW would be interested in collaborating as there wouldn't be enough appeal - it would only be us guys who would buy it and in the scheme of things, we are not that many compared to 'normal' cooks.

It is a wonderful thought though. I really love my WW ones as like Judy I have never had a failure. To be honest I am a cookbook tragic, I can just sit and read them.

This week I have bought 7 Christmas editions of different magazines Cookie - although I haven't bought many monthly magazines since getting the TMX I do make an exception at this time of the year. I just can't resist them.

I think I need to make this for Christmas.
What mayo is best? Is store brought ok? Also, I want to leave the peanuts out (due to an allergy), would it be ok without? Or what would you use instead? How spicy is it?

I haven't done this one yet rubyslippers but I am going to over the summer months. You can adjust the curry powder to suit your taste, for me I would only add 1-2 teaspoons and for some extra crunch instead of peanuts I would slice some snow peas into 3 or 4 pieces lengthwise and add those. Store bought mayo is totally acceptable in any recipe.

I am also a cookbook tragic. Just bought every Xmas mag out there - recipes, super food ideas, delicious Xmas mag, Jamie Oliver end of year mag, Australian Good Food, not to mention Rick Grant's Xmas gluten free cooking . If that's not tragic, then what is?I have to try this salad,looks great and I have some gluten free spiral pasta I will try this with. Thanks for the recipe!

Making this again today for our Boxing Day picnic lunch. I also bought myself a pineapple peeler / corer for Xmas so will give it a try - hopefully will get enough juice naturally for the salad. If there's not enough juice I'll just whiz some pineapple in the TMX and all should be fine, but I really don't think you can go wrong with this recipe.
