A very quick and easy one...
Ingredients:
250g unsalted butter, diced
150g plain flour
320g white sugar or raw sugar
65g Dutch Cocoa powder
3 eggs
1 tsp vanilla essence
Method:
1. Heat oven 180oC
2. Melt butter for 2 minutes at 60oC, speed 3.
3. Put remaining ingredients, mixed at speed 5 for 5-8 seconds.
4. Pour to lined lamington tin and bake for 30 minutes.
5. Rest in the tin for 10 minutes.
Tips: could add walnut, pecan or almond - cook further 10 minutes.

artsyshell - they were fantastic. Thanks! Very moist and flavourful. I used vanilla paste instead of the extract and added about 1/2 whole pecans, which I added in with the rest of ingredients.

KathS - Thanks for such a quick and simple recipe... I made these yesterday and they were very well received! I think next time I'll try adding a small handful of white chocolate chips.

DJ - Reduced sugar to 280g and butter to 210g. Used soft brown sugar. Should have cooked a bit longer. Very squishy in middle. Or I could use a bigger tin. Voted a hit anyway.
suzanne - I make this one often and I whip it up for dessert it's delicious with ice cream and Hershey's chocolate sauce, DH said he could eat the whole thing given half the chance.
Thermominoux - Very good recipe. Tried and was delicious. Thanks for this nice recipe.

This is quick and easy. You could almost wizz it up when the unexpected guests arrive.

I made these earlier in the week and we loved them. Simple and delicious. This is the best TM brownie recipe I have tried so far. :)

I only ever have raw sugar. I give it a quick zap first to break the grains down but not to the point of icing sugar.

Thanks. The plan has always been to only have raw sugar but when a recipe specifies white sugar I'm reluctant to ignore it. As long as I know it works, I'll ditch the white sugar completely!

I only use raw sugar for all cooking.
