I have been making this as desert lately for my kids as we are trying to reduce wheat and dairy a little (my husband and i have been eating the rest too!). Its meant to be a yoghurt type treat.
Adapted from: Baby Greens (Lynn/Chrisemer)
Ingredients
1 1/2 cups (220g) fresh strawberries (or frozen, thawed)
1 cup (120g) avocado ie one medium avo
1/2 cup dates pitted and soaked in 1/2 cup water for 6-8 hours (keep soak water)
Blend all ingredients - adding extra water, soak water or nut milk to thin. I used sp 5 for 30-50 secs and didn't add any extra liquid.
You can mix through some finely diced strawberry at the end. I just did it by hand with the spatula before serving it up.
My 3yo thought it was chocolate ;-)

A woman after my own heart! Will have to try this when I can get hold of some avocados.

wow. thankyou. Looks great
-
Certainly sounds interesting ruth
-
I was hesitant but it tastes surprisingly nice :)

Ruth, I have just bought the ingredients to make this (not for the kids, for me :-))) and when I weighed 1/2 cup of dates it only weighs 75g. Do you mean 1 cup perhaps?
-
Hi judydawn
sorry about that. Its definitely half a cup. My sons first bday today so only just saw your message.
I weighed them as I was putting them into the thermomix, ie after they were pitted and soaked. However that still sounds a lot more than your weight so sorry if its wrong, I will check again next time. it was a waste of time probably putting a weight on it in this case, I was just trying to do the proper thing but in this case has made it more confusing. I think I will just change it to half a cup as the soaking needs to be done in advance anyway.
It will be interesting to see what you think. I also mixed in some finely diced strawberries at the end, just by hand with the spatula before serving. It makes it a bit more "adult" ;-0

Thanks for getting back to me tonight Ruth, I can now get them soaking overnight. Will let you know what I think tomorrow.

Ruth, we cannot do this recipe just for the kids as it is too delicious. Loved it and the flavour of the strawberries is the predominant flavour. Thanks for posting this one, it's a little beauty.
-
wow! thanks for posting that pic JD it looks very different to what I envisaged ;D yummo :)
-
My pictures are not very professional CP63 but glad to help out. Must pay more attention to tidying up my plate/dish before taking a picture :-)) :-))
-
My kids, including me, are going to try this soon. Thank you Ruth
-
YUM! Thanks for this one, Ruth! It's perfect for us too, since we avoid dairy and sugar. Can't wait to try it!!! :)
-
It's great. Really nice.
Next time I am going to soak the dates in orange juice - I think that will work really well with the flavours.
-
I am so glad you liked it judydawn, and others too. I loved your pic, looked much better than mine, and a lot lighter too but maybe thats just the flash. I will see if there is anything else good in the book.
-
Judy your photo is great.
-
Thanks Cookie. Mine is darker too Ruth so obviously the flash does affect the colour.
-
Oh, yum - this is sooooo delicious!!! I froze the strawberries so it would be thick and cold, and we LOVED it! Thanks Ruth! ;D
Hope you don't mind if I put this on my blog - I'll link it back to here. I think everyone should know about this!!!
-
Thanks ruth. It is amazing how well avocados do in desserts. I didn't see all of Masterchef but recall Skye? doing a chocolate and avo dessert (hopefully I am not making it up!)
There is an avocado and ginger ice-cream here somewhere
-
I would think it would be great on your blog Jo. Great idea about the freezing. I am so not creative, hence why I come here ;-)
I never watched masterchef (yes perhaps the only person in the world not to see an episode) but I will check out the icecream. The raw book has a chocolate avocado desert but I have not tried it yet.
-
Ooops - maybe it wasn't on Masterchef - maybe I read it in the Raw booklet :-[

I'm sure you're right Thermomixer - it was Skye, and quite early on in the competition from memory. Avocado, agave, cocoa and coconut oil???
Here's a fancy version from Skye's Wild Sugar (http://wildsugar.com.au/?page_id=259) site.

This is super yummy! I cheated and didn't soak the dates and just mixed together on a higher speed for a little longer. I liked the little nuggets of date throughout. Certainly not as smooth as intended, but absolutely delicious.
This would be great in kids lunch boxes for morning tea. I guess the avocado would go brown so the colour might be off a bit. I'll have to try and keep some aside for a few hours next time to see if it still looks nice.

Made a version of this last night with 2 small avocadoes, 1 banana, 1 punnet of strawberries. Result was amazing! The texture was a beautiful, fluffy, airy mousse and I loved the flavour.

I managed to save some last night, and by morning tea this morning, the colour was still really nice, and still tasted great. DD gobbled it up. So yes, I think this would be great in a school lunchbox. Perhaps frozen to keep contents cool, and by morning tea it should be defrosted just nicely.

Fabulous - thanks for this idea.

Soaking my dates for this now, review later!
-

Soaking my dates now for this, but my kids ate my strawberries lol. Would blueberries work instead do you think?
