Title: Thin and crispy pizza dough

Hi
here is our favourite pizza dough - it originates from www.bestrecipes.com.au

In the TMX bowl, add 170g water.  37deg for 1 minute on speed 1.

Add 1tsp salt, 1 tsp sugar and 7g yeast (I use about 10).  Mix on speed 1 for 1 minute.

Add 260g plain flour.  Mix speed 5 for 20 sec.  This mix sometimes needs a dash or two more of water.  When it's mixed and the right consistency,  :: for 2 minutes.

Turn out on to a floured board or mat and roll in to your desired pizza size.  One mix makes 2 really big bases or 3 medium bases.  I use this recipe for pizza pockets as well and it easily makes 10.

Cook and enjoy!

hmm am I rolling the one in the EDC too thin  ??? ??? as that is crispy for us. Will be trying this one though as I think crispy is the BEST too. Like you say Maddy, let the topping shine  :D :D

Me too Kathryn but I only make 3, not 4 bases from the EDC pastry - would hate to think how thin they would be if I made 4  ???  Wish they would tell you what size to roll the bases  - oops there's another tweak for Tenina.  MJ are you reading this ;)

There was a calzone recipe in the calendar last year.  Basically a pizza dough has filling placed on half and then folded over like a Cornish pastie and sealed and cooked.

pizza stone is not essential, but helps speed up cooking.

Pizza pockets are similar to Calzone - i got the idea out of Budget Busters I think.  I just do Hawaiian filling for the girls.  They freeze well and are great for lunch boxes.

We have pizza stones - they make a crispier base.

We have been looking for our "favourite" pizza dough ..... and I think this is it!  We also love Chelsea's soaked wholegrain pizza dough - but it need forward planning and doesnt work for the spontaneous last-minute pizza.  We made 4 pizzas with this tonight - basic ham and pineapple, turkish lamb, pumpkin fetta and za'atar, and smoked sausage with capsicum and olives.  All were sensational!  Great recipe - thanks  :-*

Hi Ladies,
I'm a bit of a newbie here. I like the sound of this recipe - just want to check - do I need to pre-bake the dough before placing any toppings on it? We will be baking the pizza in a pizza maker.

No, I didnt prebake it at all - we cooked ours on a metal tray on a pizza stone in a weber BBQ - but I imagine that a pizza oven would be the same.

I made the dough exactly as the recipe said, just plonked it on the silicone mat on the bench for the few minutes it took me to wash the TMX, then rolled it out, put it straight onto the trays, topping straight on and into the BBQ.   Deeeeeeeeelicious. 

But if you wanted a thicker more doughy pizza base, I am sure you could let it rise a bit too.

Like the sound of this Narelle!  Thank you for sharing the recipe as I love thin and crispy as well.  However, I have never used plain flour for pizza dough.  Do you know if it would work with Italian flour 00 di Gran Tenero?  Thank you.

Mmmmm Yummy.
We tried this to christen my new Pizza Maker tonight.
First pizza stuck rather horribly, but after a liberal cover with flour the rest were wonderful including a fruit pizza with mango and banana.
Sorry no photos.  They were eaten as soon as they reached the table.

I find that coarse polenta or semolina works very well and also adds texture to the dough.

 The pizzas were great but didn't look the best after having to be removed rather forcibly from the stone   ;)
DGS gave a big thumbs up and that is a bonus as he is just so fussy about food.  (Another Asperger's trait  :-))  )
He had several pieces and even enjoyed the fruit one i made.

Going out in the kitchen to make this dough in a minute, thinking the pizza pockets will be nice with left over xmas meat etc,..

I also love this pizza base.  I've tried many over the years because we like to make our pizzas at home on Friday nights for an easy dinner and this base is hands down the best for thin and crispy!

Made pizza with this dough last night and OMG how lovely and easy is it.
DS added his topping and even got to roll it out, which I normally don't let him do for fear of wrecking the dough.
DH and I had our own with camembert, chicken, red onion, capsicum, sun dried tomatoes and a swirl of BBQ sauce on top of pizza sauce on it. Yummmy  :)

This is my favorite pizza dough as well. although that's a little lie cause I have yet to tried any other pizza dough to compare it with. But I usually stick to what I know works ;)

Love this recipe.  A friend brought a pizza made locally and sealed in a vacuum  pack,  as a hostess gift.  I thought we could easily make a pile and put them in the freezer as an emergency meal. The one in the photo was frozen.  I have added some extra bits.  It is thin crust and uncooked. It has a backing of baking paper which is left on until cooked. Instructios say for a crisp base just put on wire rack in oven,  otherwise on oven tray.   I am trying to post a photo but computer will not let me.  GRRRR Will try again later.

Can't wait... Going to try this one tonight. I always see to have trouble getting my base crispy and cooked thru. So excited with all the positive comments here. And what a great idea for an even quicker meal to have some frozen!!!!!!!

Also love the fac I don't have to start an hour or so before. It's 3:30 and I thought I better get on and search for one il TRY this time as I expected to need to be 'organised' in time. Will let you know how I go!

It's a OMG it's 6.30pm and I haven't even contemplated what's for dinner savior. The dough is ready in minutes, topping another couple of minutes and oven 12 mins. Dinner in 20 mins! Too cool!

This is a bit of a silly question but I will ask it anyway.  Can the pizza stone that comes with the weber bbq be used in a normal oven?  I have only ever used it in the weber and DH has packed that away for the winter so just wondering if it would work in the oven.

We love love love this dough. My daughters birthday last month I premade enough of this dough for 9 pizzas, and put it in fridge. (Of course it still rose,I  probably should have done freezer and taken out earlier) We had 12 adults and 9 kids here and I ended up throwing on another batch to make an additional 3 pizzas. I had borrowed a pizza maker oven from a girlfriend as I was contemplating buying one but couldn't decide. After this night I ordered four can you believe??? It was so awesome, and so social. I rolled and we had all the ingredients cut up. The kids decorated half each and the adults filed through making up a pizza and we all shared them. They cooked in about 4 mins and they were all eaten beautifully fresh. (my fav was the roast sweet potato and pumpkin with feta and some rocket thrown on after) was a perfect way to feed that many, and sooooo much nicer than ordering 8 pizzas or something.

Now we own a pizza maker, this is my go to quick dinner. I make sure i have artichokes and sundried tomatos in the pantry for just such aoccasion. The best pizzas usually only have a few good key ingredients, and there's nothing like fresh dough!!!!

Lilli33 was there a difference  between the one that rose and the one that you made later which did not have time to rise.  We have some members of our family who like them fluffy and thick, while I like them thin and crisp.

Well tbh, the one that I made instantly was lovely and pliable and not sticky. If you know what i mean. So nicer to work with. There didn't seem to be a big diff in performance. But if either was left a bit thicker, it puffed up beautifully. Do without being a true 'pan' pizza we could get thin n crispy and a thicker base. If that helps?

Can I ask a really stupid question about pizza stones??  Are you supposed to put the pizza directly onto the stone, or onto a tray that sits on the stone? 

We use this recipe for pizza dough, and put the pizza onto a tray and into the Weber BBQ, with the tray sitting on the stone.  I cant seem to get the bases crispy enough without burning the topping.  However, we also use a non-stick liner on the tray (a bit like reuseable gladbake paper), and I am wondering if that is "insulating" the tray a bit from the heat of the stone, and that is why the pizzas dont cook properly

Karen I was advised when I bought mine, to place some baking paper on the stone, then pizza on top.

SO I now make my pizza on the baking paper and transport straight to the stone. Makes cleaning and lifting the pizza off easier.

Love this recipe,  but also have trouble crisping the base.   New trick...I heat a large cast iron flat grill and slide the pizza on to this,  for a couple of mins. Seems to work fine.  I also spray with oil around the edge of the pizza.  Gives it a nice crisp edge.

I use a pizza lifter I got from a kitchen shop too. Makes it very easy to lift the baking paper and pizza off the stone.

I made this on Monday night and it was the best pizza base I have ever made. My only problem was getting it fom the bench into my pizza maker. Worried that if I use the baking paper method that the paper may burn in the machine. Has anyone tried doing this?

I always use baking paper MF - only way to go  ;D You make your pizzas up on the baking paper before transferring to the pizza maker (and leave some room on the sides so that you can pick up the paper afterwards)

Question for the pizza experts out there... How do you make the base crispy if you are using a pizza stone. I followed the suggestion of using baking paper on top of the stone and the ends were crispy but the actual base was not...any suggestions please?

thin base, very hot oven, and just a sprinkle of toppings

top the pizza on a well floured pizza peel and slide it to the pizza stone without paper to lift it out once cooked remove with the pizza peel

if u dont a have peel u could use a piece of thick cardboard

Baked pizza in our new Miele oven this afternoon - using the automatic pizza setting - and m problems getting a crispy base are solved  :)  But now I have a crispy crunchy base and burnt toppings  :(

Need to experiment more with new oven

KarenH, yes i have the same with my miele on automatic pizza, great bases burnt toppings. I tend to use the normal setting & cook on a pizza stone.

Let me know if you have better luck with the automaic programme.

Thanks Halex! I will try that next time.  Did you get the proper Miele pizza stone?  They are super-expensive, and I was wondering if they were any better than the usual one you can get at any kitchen shop

Thanks ladies, I am sure I read somewhere that they should go in cold- but i just find that they aire quite doughy and undercooked in the centre. BUT I do love a lot of topping too!

Mine were doughy and undercooked in the middle too, but last time I made them I reduced the topping amount slightly - especially the "wetter" toppings like the pizza sauce and pineapple and tomato.  Drier things like salami didn't seem to make such a difference.  Anyway - with less toppings they certainly crisped up better

I found if I brushed my pizza paddle with polenta before adding the base and then toppings, it would slide off into my pizza maker. Then cook great and quickly, and then was easy to remove. The polenta also helps to give a crisp base, and is tasty to boot.

Since having my pizza maker, I wouldn't bother with pizza in the oven again. Because the stone gets up to 300 deg, and has a top element, the (fresh) dough cooks in under 5 mins, which is time enough to cook the top without burning it. Then I add any green like rocket or basil or baby spinach after I take it out. The stone is also suppose to be a bit like a wok, it gets seasoned e more that's cooked on it, so no need to try and clean or wash... Just scrape and use again. Also perfect to re heat pizza. Comes out almost like a freshly made one! I used it the other day to heat garlic brad from the freezer. Soooo much quicker than my smug oven. The oven takes forever to heat up to a high temp etc. couldn't be happier!

The oven takes forever to heat up to a high temp etc. couldn't be happier!

Sounds great- does it cook only one at a time?

Had pizzas last night. Perfect. Used ff oven at 200, sprinkled pizza stones with semolina, used minimal toppings, cooked for approx 18 mins perfect.

KarenH perfect in my Miele oven.

Snap Hally!  We had pizzas last night too ...... some cooked in the weber using the stone, and some cooked in the Miele oven.  Cooked at 170 degrees using the "intensive bake" function, which is supposed to be good for cooking things that need a crisp base and a moist top ie pizza, quiche.  Perfect.  Didnt use the pizza stone, because DH was using it in the weber.

What is the intensive bake function on the Miele girls?  What is the symbol for it?  I can't find that wording in my book in the function section but the pizza recipe gives it as one of the ways to cook the pizza.  Is it the symbol with 2 horizontal strokes, 1 top and 1 bottom?

Obviously a different model to mine Hally, mine is a H 334 B KAT.  I'm doing pizzas for lunch using balls of frozen dough so will try the setting which I think means intensive cooking.

When I bought mine, I ddnt see the fuss over the oven, of course didnt tell DH that after spending so much.

ended up going n a Miele cooking class & now love it. So much better than a basic oven :)

Judy, have just looked up my instruction manual, and it says the symbol for intensive bake is the fan symbol with a horizontal line underneath the fan.  Hope your pizzas turn out well!

I haven't made a double batch but 1.5 of the recipe and that works well. As for freezing I'm not sure.

Double batch was not very full in the  *: recipe doubled is only 520g flour so similar to a bread recipe  :)

I just have to say how much I love this dough. We like thin and crispy pizzas, and this is the best.
I've made this in my ThermoChef without any modifications.
Tonight I made it using half whole meal flour and half spelt flour. It worked really well, and we loved it. I even impressed my vegetarian BIL who came for dinner. This recipe is a winner!

I FINALLY got around to making this over the weekend. Well, Hubby did!  ;D He insisted on letting it rise first though much to my dismay "But the others on the forum don't rise there's!!" was my mantra.

The problem I had with it was as others have said, tricky to get onto the stone and I am SHOCKING at getting my pizza dough round!

I am a topping queen so next time less toppings as my vegi pizza was soggy in the middle but hubbys wasn't :)

That looks great Karen, my bottoms never look like that ;D  I am not a good pizza maker, don't make them often enough to really perfect them.  They taste good but I get myself into so much mess making them that I can't be bothered very often.

We have had lots of trouble getting the bases crisp like this, and since getting the new oven and asking the Miele chef how to do it, we seem to have got it right at last

BUT ......... my biggest secret .......... DH makes the pizzas in our house  ;D ;D ;D  so I cant take much of the praise at all

Good luck with your oven Hally - maybe talk your DH into doing them too  ;)

I would LOVE a Miele oven. My Dyson Vacuum Cleaner (DC02, so pretty old!) just died and after lots of online research, I went for a Miele.

When my Linea oven dies, I'll buy a Miele. Better start saving up now! :o

Me too. I hate my Linea oven. It came with the house and it is terrible. I have to keep a thermometer inside it so I know what temperature it is at instead of the temperature it is supposed to be. I put a new kitchen in our old house 6 months before I sold it. I miss the Kleenmaid oven I put in that kitchen. ???

I've not done either - doesnt last that long in our house.  The commercial pizzas in the shops are frozen uncooked though, so I would give that a go, depending on what toppings you use, assuming they can be frozen and defrosted without going yukky.

Hally, I freeze mine cooked (not saying this is better but you never know how much you want to eat which is why I cook them first) and put them straight into the oven frozen to reheat.  Both methods work though as Karen said, the ones you buy in the shops aren't cooked first.

Was keen to try this dough this afternoon . .  dough worked perfectly but (mistake was mine) not quite done on the base - I took it out too early . . .

It was different to anything we've tried on a pizza  but it worked really well and tasted terrific.  The only thing I did differently was  was adding two heaped teaspoons of veg stock to a cup of hot water to the sweet potato as it was cooking
 (omitted the eggplant as we didn't have any . .)

Did this in the oven which was already preheated thanks to a banana bread cooking away happily.  When it came out I just turned the oven up as far as it would go (doubt even then it was hot enough - it's a very old "I'll do it my way" kind of oven . . ;D  )

Really appreciate the dough recipe, Narelle - and this will be the one we use from now on . . . :D

I only made one pizza - the other half of the dough I've frozen for next time . .

All those pizzas look lovely. We use this recipe all the time for our pizzas, usually to make four individual pizzas so people (2 adults, 2 kids) can have their own toppings.

There usually isn't anything left to actually freeze :) (though last time I froze some dough as I made a double batch as o wasn't sure how much we'd need as we had guests over)

[pizza topped with minced beef, chicken cooked in tikka paste and not too much mozzarella but lashings of tomato sauce ]

Not sure if anybody else does this but based on an idea I saw on The Fabulous Baker Brothers (UK programme currently on Lifestyle Food) I made a beautiful pizza today.  Make sure that about a quarter of the flour is wholemeal (they suggest spelt but I just used wholemeal plain flour) as this gives it a bit of 'bite'. Roll out the base and par cook it in the oven for about four or five mins, enough to make it very light brown in colour. Then add the toppings and carry on as normal. This ensures the crust does not go soggy with the sauces and cheese. My pizza this afternoon using this recipe was lovely. I haven't done it yet but I assume you could freeze the bases at the end of the par cooked stage. Mine was actually made from a Dough I'd frozen previous.

Bacon, cheese and pinapple.
Salmon, corn, tomato, cheese and mushrooms.

This is such an easy dough! And it was ready in next to no time at all ;D
I think I do need to buy either a pizza stone or a pizza machine though, because my base was still a bit soft in the middle of the pizza and not very brown on the bottom. I did preheat my oven trays too.

But the pizza was still great ;D

Prick the base, add your pizza sauce, then toppings. Don't need to parbake the crust at all. The stone does tend to give a crispier crust. Some tips I learnt is don't spread the pizza sauce all the way to the edge, make sure it's evenly spread, just put cheese around the outside and barely any cheese in the middle. Use one of those rocking pizza cutters as it doesn't drag the toppings.

I just left it bare, no tin foil or rice. It didn't bubble cause it was only in there a few mins. I found par cooking the base meant that it didn't get soggy with the toppings. I also tend not to overload the cheese cause I think that tends to make pizzas soggy.

I made pizzas using this dough for mum and SD tonight, and I think I got it better than last time. It might have been because I had the oven temperature up a bit higher ;)

On one pizza I put tomato sauce, bacon and mozzarella, then I cooked it for ten minutes, then added fresh chopped tomato and avocado and a little more mozzarella and cooked until the cheese was just melted.
On the other pizza I put tuna, corn, fresh tomato and mozzarella.

Mum loved the one with avocado ;D

Made this again last night. A savoury one of roast lamb, fresh tomato, mint sauce, shaved sweet potato and mozzarella. And a sweet one of cream cheese, honey, stewed apple and a sprinkle of almond meal :)

Had my first go at making pizza dough today using this recipe.  Wow, very impressed with the results. 

The only problem I had was that Thermie decided he didn't want to knead (nothing happened when I pressed the  :: button).  I did a bit of kneading by hand and, although I have nothing to compare it to, I think the end product was pretty good.

For toppings I used leftovers: Tenina's Crio Bru Beef Chilli which had some rice added, avocado and some of my homemade goat's cheese.  Yum.

Hi Astarra, yes i had set a timer for the kneading.  I did a search of the forum and saw that DJ had a similar problem not too long ago.  Her fix was unplugging Thermie and leaving him for a bit so I am hoping that works for me too.

Just tried Thermie again and all is good.  Actually, thinking about it I think the fault was all mine and not Thermie's (yep, user error who would have thought??).  I think I may have flicked the dial onto speed 1 while trying to use the  :: function instead of leaving it in the 'lid closed' position.  Oops!

How do you tend to par cook the base? Tinfoil with rice on top? Otherwise I imagine it might get a little air bubbly.

I just left it bare, no tin foil or rice. It didn't bubble cause it was only in there a few mins. I found par cooking the base meant that it didn't get soggy with the toppings. I also tend not to overload the cheese cause I think that tends to make pizzas soggy.

VieveMS - did you have a time set for kneading? I have a feeling (tho it could be wrong) that TM needs the timer going to knead.  :)

Made this pizza crust this evening and topped it with  a tomato , mushroom and fresh basil pizza sauce. It was absolutely delicious. What a simple , beautiful and extra crisp crust !  Thanks for this wonderful recipe

I've always loved thin crusts but can't seem to find one at the usual pizza outlets . It is SO much healthier to eat this one with very low salt and fat content . ( except for the obligatory mozzarella )  . Lots of fresh tomato, mushrooms and basil .
What about the pizzas  sold these days with the cheese and Frankfurt stuffed crust !!!!!!!!  Ooh yuk

I fancied pizza for dinner tonight, and this recipe is the absolute best for thin and crispy pizzas. DS helped by measuring all the ingredients and pressing the buttons although I couldn't talk him into rolling out the pizzas.

After reading all the posts I made this fast and easy recipe for my dinner tonight, then remembered that there was very little here for the topping, so had home made tomato passata, sundried tomatoes, 1 eschalott sliced, mozzarella and avocado. used the hint on Miele oven at intensive bake and it was FANTASTIC!
