Barbecued pork chops, a few sliced potatoes cooked in the non stick and salad. Lovely caravan food.

Steamed salmon and vegetables with mango salsa. Mango salsa , fresh mango little bit of red pepper, coriander, dash of rice vinegar, salt chilled in the fridge while cooking the fish . The rice vinegar seems to soften the mango .

Katie, the mango salsa sounds nice.

This was last night's dinner, and I was hoping for some leftovers for dinner tonight, all gone  :-)) It was a double sized My Favourite Quiche with red salmon and a bunch of asparagus with a large chopped salad (based on Paul Newman's recipe). We currently have an egg and lettuce glut :)

We had home made pizzas tonight...one of our faves, mainly because kids get to make their own, so generally they eat them happily! Just browsing to find something for tomorrow!  :)
