Title: Raw Cacao Brownies
Post by: Nay-nay on October 30, 2009, 01:23:52 am
I just came across this recipe while surfing today and thought the Raw Foodies would appreciate. It is from Jann French  ;)
2 cups raw cashews
1 cup Medjool dates
1/2 cup raw cacao nibs
1/2 cup Mesquite pod meal
1/2 cup of raw nuts of your choice
1 vanilla bean
1/4 tsp sea salt
Process nibs in TMX (and set aside)
Process cashews with salt and vanilla bean until very fine
Add other nuts and chop not quite so finely
Add dates and blend
Add cacao and mesquite meal, blend until smooth
Pat into squares or roll into balls or a shape of your fancy
Eat before everyone else does
Option: Leave out the Mesquite meal for an equally delightful treat that's less like
a brownie and more like a chocolate fruit nut slice. Bonus two recipes in one!

We had these on new years eve covered with chocolate ganache and Trotters apple-quince pavé....and I had forgotten the memory card .... I think this would be a good idea for Easter  ;) Thank you Thermomixer.

Enjoy Ceejay  :D

At least you don't know what you've missed Nay-nay  ;D

I have made these twice, both times leacving out the Mesquite pod meal as I dont have it . I made them into 1 tsp balls and put them in the freezer... WOW these are sooooooooooo good and very addictive. ONce you have one you will want them all. I have made them with Cocoa powder as well, not raw but i wanted to see how they would taste. I also halved the recipe both times as there is only one RAW foodie in the house :) ME!

I was wondering what Mesquite pod meal tastes like and how it may change the flavour of the brownies.  Realise that other TMers have made this recipe without and will probably do the same but was just wondering.

It has a sweet taste like caramel amajjika  :)

Mesquite Powder

This powder is packed with protein, is a high fibre source and is high in magnesium, calcium, potassium, iron and zinc. Due to it's high fibre content, it is therefore able to stabilise blood sugar and because of this, it is beneficial to those who are trying to lose weight and diabetics.

If you enjoy smoothies, you will love mesquite powder which can be added to smoothies for extra nutritional value.

Mesquite powder is made from the ground up ripe seed pods of the Mesquite Tree and has been used since ancient times as a dietary supplement. It's high fibre content means it takes 4-6 hours to be digested therefore preventing blood sugar peaks and keeps you from feeling hungry for some time. This makes it ideal in weight control as it has a diciplining effect on appetite.

It has a sweet molasses/caramel like flavour and is ideal in smoothies and drinks, as well as desserts and as a natural sweetener. You can also use as much as you like.
