Recipe Book Recipe Reviews / Re: EDC Apple Teacake
« on: May 23, 2013, 01:27:45 pm »
I have always overlooked this recipe, as it didn't seem to exciting, but I made it yesterday as I had a heap of apples going a bit wrinkly. Wow, simple, but everyone loved it. My 6year old even said today that : "it tasted better than icecream, no just joking, close. Ok not as good as icecream, but better than chocolate".

I tried to make a healthier version of it, so I used spelt flour (half wholemeal, half white) and rapadura sugar instead.
I also halved the recipe and put it in a lamington for making squares for the school lunchbox. It didn't look like it was going to fill a lamington tray, but it worked great.

Recipe Name: Millet and Pumpkin Porridge/Pudding
Book Name: In both the Gluten Free book page 67 and Vegetarian book page 26

Score: (4/5):

I found this recipe flicking through the books, looking for breakfast ideas for the baby!
Thought this sounded like a reasonably healthy, gluten free breakfast.
I only put in 400grams of milk, as I am always making recipes too soupy, but I should have stuck with the 500grams as it said.It has now dried a bit, so I'll have to reheat with more milk when I serve it up.
It is actually a nice tasting dish that I would eat for breakfast.
I plan to dish it up to the baby tomorrow with some thermie homemade yoghurt. I am sure he will like it, as it has just the right amount of sweetness in it.

Recipe Name: Chunky Mexican Beef Dip
Book Name: Meat on the Menu
Tweaking details: none
Score: (4/5)

I made this for a bbq a few weeks ago and I was very nice and tasty. A great winter warm dip.
It doesn't look or smell pleasant cooking it, but it comes together nice at the end.
I served mine with corn chips, but it would be great inside a cob loaf if you eat bread.

The recipe makes quiet a bit, so I had to freeze half of mine (without the cream cheese in it) for another party!

I didn't see a review on the EDC review page here: http://www.forumthermomix.com/index.php?topic=8487.0

Looks like yours is from a different cook book.

What is the Fast and Easy cookbook?

Probably the same recipe though.

Recipe Name: Hungarian Goulash
Book Name: Everyday Coobook

Score: (4/5)

I made this a few weeks ago, but just realised that no one has reviewed it yet.
I really liked it. Easy to make. I doubled the meat quantity and add a tiny bit more of all the wet ingredients, but it didn't really need it. The sauce was sufficient as it is. I could have perhaps cooked it longer to let the sauce reduce more, as I had used a cheap meat cut.

I served mine on steamed quinoa with veggies.

I am sure I took a photo, but I can't seem to find it on the iphone!

I was flicking through the Vegetarian book this afternoon and this recipe stuck out, as I needed to use up some polenta and cream and had all the other ingredients.
There is no way I would attempt this recipe without a thermomix! Having a TMX made it super easy.

The recipe tastes great and would make a wonderful dish for guests for lunch, if you could present it nicely.
However, mine was a bit sloppy, so I need to work on it a bit.

I didn't have any instant polenta, only the more course stuff, so I left it to cook for a lot longer (12mins instead of 3). However I don't think I let it sit enough to cool and set, before grilling it, so that was mistake one.

Mistake two, was perhaps using too much zucchini for the topping. The recipe stated 1 zucchini, but they vary in size a lot! It really should state a weight. I didn't think it was going to set the top in 25mins with only 2 eggs and so much liquid and I was right. I cooked it for 40mins, but I think it still needed more, or more rest time.

I noticed about an hour later after it was cooling on the bench top, that it had firmed up a lot more. So perhaps a dish better served cold.
Great flavours though and nice colour combination.

Oh and I would definitely cut the asparagus and roast capsicum smaller before putting on the polenta, as it would then be easier to cut and present better.

Oh sorry, not very good at checking the forum for comments on my posts.
You can buy red rice from any Asian supermarket.

I made this for some dinner party guests tonight and it was super easy and everyone loved it.
Very fresh tasting and a touch spicy!

I made a double batch of the sauce while I was at it, so I can quickly steam the rice/quinoa and chicken for dinner again another night!

I didn't have any toasted sesame oil, so just used normal. Tasted ok to me!

The benefit of having the ingredients listed next to the recipe for each Thermomix book, means that when you have ingredients you want to use up, you can now search online using this forum, or google, to find recipes in the books you already own, that have the ingredients you want to use. I was always searching for recipes online for my leftover mint etc, but I wanted to be able to also search the books without having to painstakingly read each page. Now we can have the best of both worlds... recipes from the books and from online.

To specifically search the books I have already indexed, just go to the Cookbooks Contents category and enter a search and it will automatically return results from just this category. If you are after something specific like Egg Yolk, then include the quotation marks around the words like this "egg yolk", so just those words are returned, otherwise the search will find all recipes with EGG or YOLK.

Happy recipe finding!

Recipe Name: Minted Red Rice and Chickpea Salad
Book Name: For Food's Sake, by Tenina
Tweaking details: I  used less peppercorns
Review: Love the recipe, especially the sauce/dressing. I made the mistake of buying the wrong type of red rice though. Who would have thought there are different types! I just grabbed a packet one day at the Asian grocer. I happen to buy red yeast rice though, not that it said that on the packet. I just looked at it after it was cooked and thought, that isn't what Tenina's looked like. So I googled some pics of red rice and realised it was a different one.  Red yeast rice is meant to be a highly nutritious fermented version of red rice, but it went very gluggy when cooked as per the instructions in the recipe. Anyhow, I think the rice is the least important part of this recipe. Next time I make it, I will do it with quinoa instead, but using the same dressing and salad ingredients.

The sauce is a real winner, but I only used half the amount of peppercorns, as I thought a tablespoon would be too much and for me it was a good choice. There is just enough pepper in the dressing to not make it overpowering. The combo of salads exactly as listed is perfect.

Definitely one to make again. I love a good salad.

News about Thermomix / Re: Choice Review - Top Marks
« on: October 16, 2012, 03:28:03 pm »
Shhh don't tell Choice mag.. member only content:

01.Introduction

We review three all-in-one kitchen machines, priced from $329 to $1934.

We've rated each appliance for:

performance, and
ease of use.
The Thermomix has been around since the 1960s, when it first launched in Germany as a food processor. After many years of innovation, it found its way onto the Australia market in 2000, combining the functions of 10 appliances in one unit.

We first tested the Thermomix as a "first look" back in 2010. Since then a number of young pretenders have sought to topple the king of kitchen machines, and members have been clamouring for us to test their claims directly against the Thermomix and see whether it really does justify its high price.

Our home economist, Fiona Mair, has tested these machines and is impressed with the performance of all of them. They are true multi-taskers that can chop, beat, mix, whip, grind, knead, mince, grate, juice, blend, heat, stir and steam. The Thermomix and Thermochef even have inbuilt scales.

For more information about benchtop appliances, see Kitchen.

Our findings

While all the machines are capable of a number of tasks, it’s ease of use that sets them apart. The Bellini and Thermochef both come close to the Thermomix on performance. But when it comes to ease of use, the Thermomix is miles ahead, leaving only one clear winner.

The Thermomix is undoubtedly the best kitchen machine on the market, which is why we score it above the others. Whether it’s $1500 or so better than the Bellini depends on how much you value clear instructions and a fiddle-free life.

We also looked at the Kenwood Cooking Chef - it's different in design to the other all-in-one machines and we felt it was unfair to compare it directly. It looks like a traditional Kenwood Chef benchtop mixer, but with an induction heating element that allows you to cook food in it as well. See What to Look For, for more information about the Cooking Chef.

How we test

Performance our home economist, Fiona Mair, assesses the functions of the kitchen machines by conducting a range of tests from chopping, to kneading, to braising and making risotto, steaming and crushing. A total of 16 tests are conducted on the machines and the results are averaged into the overall performance score.

Ease of use Fiona assesses how easy the controls are to use, the general ease of use of the machine and how easy it is to clean and store.

04.What to look for

Controls should be easy to use and comprehend with clear labelling and/or bright digital display.
Inbuilt scale is useful and allows you to weigh food as you go.
Instructions should be detailed and comprehensive, especially if you haven’t used this type of appliance before. They should also come with a decent amount of recipes to get you started.
As few attachments as possible makes storage easier. The Thermomix, Thermochef and Bellini come with the mixing bowl and lid, simmer basket, stirring attachment, measuring cup, spatula and steaming basket, while the Kenwood comes with all the accessories of a normal benchtop mixer plus an additional food processor attachment.
Comfortable handles that are well-insulated are useful. These bowls can get heavy with a full load and the handles can get hot after long cooking periods.
Surfaces should be easy to clean with few cracks and crevices where food can become trapped.

What about the Kenwood Cooking Chef?

The Kenwood Cooking Chef KM070 ($1999) is different in design to the other all-in-one machines and we felt it was unfair to compare it directly. It looks like a traditional Kenwood Chef benchtop mixer, but with an induction heating element that allows you to cook food in it as well.

While the Kenwood can perform the same functions as the other machines on test, you’ll need to use separate attachments to achieve the same results that the other ones can do in one bowl.

It comes with a flexible beater, whisk beater and hook attachment for stirring and also a food processor attachment and steamer.

However, there are many optional attachments you can buy for the Cooking Chef that add to the already-hefty price tag while taking up lots of space in your kitchen cupboards. It’s very heavy at 14kg and has a three-litre cooking capacity (six litres if you’re not cooking).

For performance the Cooking Chef is very good, but only OK for ease of use. The cooking time, temperature and speed can be adjusted at any time without stopping the machine, and the induction heating is very responsive to temperature change. Take care when using high temperatures, as Fiona found the mixing bowl to reach 88°C when cooking at 140°C.

The controls are easy to use and it has a splash guard that contains splatters and makes adding ingredients easier. The unit vibrates and moves along the bench when mixing heavy dough, and the large lift lever can be fiddly when releasing the motor head to open and close.

The large bowl tightens itself onto the unit so it can be difficult to remove, and it can also be awkward to clean in a domestic sink. No parts are dishwasher-safe and the stainless steel exterior and bowl requires more attention when cleaning.

While some parts can be stored in the bowl there is no separate storage box for attachments. According to the instructions the unit is not suitable if you have a pacemaker or other active implant.

The Cooking Chef isn’t really necessary if you already have a benchtop mixer and cooktop. For general cooking Fiona found it to be more of an effort than cooking on a cooktop, though she did find it useful when cooking foods that need to be continuously stirred for long periods of time, such as risotto.

About the rest

The Bellini Intelli Kitchen Master BTMKM510W

The Bellini is very good for performance but only OK for ease of use. If you’re not familiar with kitchen machines, it’ll take some time to get used to as its instructions and recipes are limited.

The unit is very stable on the bench, however the jug vibrates when mixing heavy dough. You can make adjustments without turning the machine off, but if you stop the machine to scrape the bowl or check the food you’ll then need to reset the temperature, time and speed, which can be frustrating.

It’s difficult to remove heavy batters from around the blade and scraping the sides of the bowl is awkward. The digital display can be difficult to read unless you’re at eye level. While the blades are very easy to assemble and disassemble, the lid can be stiff to open and close and baked-on food can be difficult to clean.

When cooking, Fiona found it slow to respond to temperature change, especially when reducing from high temperature. Boiling liquids can bubble out onto the bench, and meats and vegetables can become shredded when being braised. However, at $329 this model gets the job done and is still worth considering.

The Thermochef Natura

The Thermochef is very good for cooking performance but only OK for ease of use. However, it’s worth considering as a kitchen machine that has the same features as the Thermomix at less than half the price.

It has a scale, which is useful, however you need to remove the mixing bowl from the base each time to place it on the scale, which isn’t ideal if you need to weigh during cooking. It performs well across most cooking tests, although Fiona found the potatoes to be overcooked, resulting in a grainy, watery mash. She was also unable to make mayonnaise from the recipe as there wasn’t enough mixture.

The Thermochef is easy to use once you’re familiar with it, with fairly clear labeling and push-button controls, thought its large digital display can be difficult to read unless you’re at eye level. The lid requires some strength to open and close and we found it difficult to fit (likewise the steaming basket). Recipes with several steps require you to select the function, speed, time and temperature multiple times during cooking, which can become annoying.

Fiona found removing heavy batters difficult, and when mixing wet ingredients liquid can splash out if the measuring cup isn’t in position. When braising, browning on the bottom of the bowl and baked-on food can be difficult to clean – to help, run through a cycle with water and detergent.

I made this for dinner last night and it was super nice. Especially the sauce.

I bought a 1.8kg piece of corned beef, so put it in the varoma to cook for 1.5 hours at varoma speed 2 and then added some whole potatoes to the rice basket and steamed again for another 30mins varoma. Adding in some beans, squash and asparagus just before the end.

I should have taken a photo, but the asparagus was overcooked and looked yuk, so it wasn't photo worthy.
The sauce really made the dish great though and even the kids liked it.

Some other amendments: I didn't have any malt vinegar, so used balsamic. Didn't use any umami paste at all, as I didn't have any made up and used dried thyme instead of fresh.
After the 2 hours of steaming, there was only around 350mls of liquid left in the bowl which was good, as it made the sauce more concentrated, but very nice.
It makes a lot of sauce, but given we have 1.8kg of beef, it will last a while. We don't eat sandwhiches, but I am sure the meat and sauce will be used for a lunch nibble platter on the weekend.

The two hours of cooking is a bugger, but easy to set and forget.

I just made these for dinner tonight and I must say, I was so mighty impressed at how good they tasted and how they were so like the real Ikea meatballs.

What I did differently though:
I followed the ingredients list as per the MOTM book, complete with dill, but did half pork and half mince.
I didn't steam them, but baked them instead (I only do this when I am in a hurry, as I can then cook the mash potato and steam veg in the thermie while the balls are baking in the over).
I then made this sauce on the stove (but would  be better done in the thermie) http://en.christinesrecipes.com/2011/02/swedish-meatballs-with-cream-sauce-ikea.html which is such an awesome sauce recipe, that tastes just like real Ikea swedish meatball sauce. I used one teaspoon of kecap manis (sweet soy sauce) and one teaspoon of dark soy sauce. NICE sauce and perfect with the meatballs.
I also served with the Ikea Lingonberry ?? jam, which tops it all off.

Ah, such a simple little mistake! Perhaps you could update the recipe so others don't make the same mistake... or is no one else a bad a cook as me!??

I will try it out again for sure! An excuse to host another high tea party!
