Bumping this for newbies and adding todays's variation.

Flattened chicken breasts in between baking paper with a rolling pin.

Dipped in flour, dipped beaten egg then dipped in blitzed crackers.

Shallow fried and served with carrots and homemade oven chips.

Top tip mix mayo and the well known red sauce ( or seeded mustard) together for dip.

Delicious.

We had these a few weeks ago. Always a fav.

I mix mayo & sweet chilli as a dipping sauce, that works well too.

I forgot to add a review f these - they taste fantastic!

As I always I modified to what I had in the house - so soaked in yoghurt and crumbed in cornflakes blitzed in the thermomix.  The kids often have these with salad for a quick weeknight dinner

Could I use savoy biscuits? I think they are similar to Ritz and Jatz but not 100% sure.

Any savoury crackers would work.

Made these on Saturday night for the kids when DH and I were having a curry. The kids said they were great but they didn't brown up in the oven and didn't seem to be cooking very well so I popped them in the deep fryer for a few minutes - just enough to brown them.

I also found they stuck to the alfoil which I had sprayed with Olive Oil. How fine do people crush the biscuits? I think mine may have been a bit too fine.

I crush in TM, but not fine.

Gave up with alfoil for anything years ago, always sticks :o

Maybe you didnt cook them long enough, mine brown up.

Glad the kids liked them, cp has them in his lunch box sometimes.

We'll definitely have them again, they were quicker than flour, egg and breadcrumbs and I'm more than happy to deep fry quickly. There are a few left over i might have for lunch today.

Hally do you spray them with oil or anything before cooking or just pop straight on the try? Do you use glad bake or something else to line the tray?

No i dont spray, i use baking paper or my french baking mats, you can use thermomix mat but it does stain in the oven whereas my french ones dont.

I've got a giant size one of the french ones but keep forgetting to use it unless I use my full size oven trays. I really need to get some smaller ones.

Great recipe, the buttermilk makes the chicken so tender and succulent. 5/5
