Christmas Applesauce Cake

I don't know that this recipe is all that Christmassy but it may be a good one for diabetics with so little added sugar.  I found it on Amanda's blog and converted it for the Thermomix.

2 cups raisins (sorry forgot to weigh them)
250g jar apple sauce or make your own
2 eggs
2 Tbspn castor sugar, 30g
3/4 cup vegetable oil 170g
280g plain flour
1 tsp bicarbonate of soda
1.25 tspns cinnamon
1/2 tsp nutmeg
1 tsp vanilla

Preheat oven to 180oC.  Grease and line a 24cm x 11cm x 8cm loaf tin.
Cover blades with water, add the raisins and cook 5 mins/90o/reverse/soft speed.
Drain into the steaming basket and rinse with cold water until lukewarm.  Rinse the TM bowl with cold water to cool that down too.
Add the eggs to the cooled bowl.  Beat 15 sec/speed 6.
Add raisins, apple sauce, castor sugar, oil and mix 30sec/reverse/speed 1.
Add the flour, bi-carb, cinnamon, nutmeg & vanilla.
Knead for 30 seconds.
Pour into the prepared tin and bake 1 hour 15 minutes or until a skewer comes out clean. You may need to cover it for the last 10 minutes or so to prevent the top from burning.
Allow to cool in the tin them remove to a wire rack to cool completely.
Dust the top with icing sugar for a Christmassy look.
Nice served with butter.

Tip - mixing the batter on knead does tend to chop the raisins a little so if you prefer full raisins I would just mix on reverse, speed 1 or 2 until everything is mixed well.
