We had a little taste test a few nights ago.  Absolutely delicious.  Quite rich, but it's supposed to be.  I used rum, and the amount was perfect.

HI,

I found this recipe a couple of weeks ago and had to make it. We had a party last weekend and it was an absolute hit! Used that as a test and now planning to make more next weekend to give to some family and friends at Christmas. Reckon that should make the mother and mother in law love me!!

It is really really good. The cranberries especially give it a great flavour, and along with the green of the pistachios it is very Christmassy.  :D

I made this one today, couldn't get cranberries so used ginger instead.  Took a while to make and I made a hard job of the rolling stage too but eventually had 3 thin rolls in the fridge.  Tonight I cut them all into thin slices and put them into containers to give people. I see most people just give then away as 'sausages' but I decided to make life easier for the recipient and do the cutting myself. Of course, all the end bits went into my mouth.  I was so surprised to see it did look like a piece of salami when cut as the mixture itself didn't indicate this would be the case.  Some red to go with the green of the pistachios would have been nice but at this time of the year it is not unusual for our supermarket to run out of things like this.

I did five batches on the weekend - making 10 salamis.
Did two double batches which TM easily handled, then one more with gluten free biscuits.

I currently have nine in the fridge (one already gifted) - all wrapped in baking paper and then coloured cellophane with ribbons to tie the ends. Just like bonbons. They look great.

And good to know that a double batch is handled well. I'm hoping to make some over the next couple of days, but need to make about 10, so thinking I'll make 2 in each normal sized batch, and then cut into shorter sausages if that'll work? If not I might do JD's idea and give them some slices.

Wow-- How fun to read of everyone's success!

I thought I was bad making as many as I did... but I see I'm in very good company now!  ;)

Today I bought some puffed rice cereal to use instead of the cookie chunks. I can't wait to a gluten free version as two dear friend are gluten intolerant. I think the size and shape of the puffed rice will lend itself well to "salami foolery".

Too bad we can't taste photos... I don't think the photos in my slideo do much to entice people into making this. The absolute deliciousness of this high-quality treat just doesn't come through... you simply have to TASTE it.

Looking forward to the next batch... yum yum...

I made a single batch this afternoon (2 salamis) and just had a tiny sample.  Very nice indeed!!!  ;D

Just thought I'd report on my trials with the gluten-free version: not successful ! :( :o :'( :-[

Flavour was great! Chocolate texture was terrific! Buuuuuuuuut... those lovely rice puffs in the mix spoiled the overall texture. I even modified the method so that the rice puffies would not get soaked in the alcohol and get mushy but still, a disappointment!

DO NOT TRY THIS AT HOME!  Wait, hang on, and be patient... will find a fix and get back to you on this.  :)

( will try again with Rice Krispies next time... they may just work.)

I made chocolate salami to take to work today for a Xmas treat.  Mine didn't look so much a salami, but more of a enormous king size poo!  My rolling a wrapping skills need work!  At least my workmates enjoy a laugh, and it tasted really good too!
