This recipe is adapted from one I found in a cookbook from the Australian Breastfeeding Association.
Ingredients:
250g dried apricots
150g fine dessicated coconut
120g icing sugar
200g sweetened condensed milk
Either crushed nuts or more coconut for rolling in.
Method:
Put the apricots in the TMX bowl and chop for about 10 seconds speed 6 - or until finely chopped.
Add all other ingredients and mix speed 4 for 10 seconds.
The mixture is quite sticky, and you may have to mix in the last bits with a spatula.
You can either roll this mixture into small balls and then roll in coconut or nuts
OR
The easier option is to roll the mixture out on the thermomat or baking paper or glad wrap into 2 long sausages. Then coat the "sausages" in nuts or coconut.
Wrap in gladwrap/thermomat and refrigerate until firm. Slice and serve.

The easier option certainly would be less time consuming Karen, sounds nice.

As you can probably tell from the ingredients, it is quite sweet - but guests always seem to love it and ask for the recipe. This is a great one for kids parties too.
You could double the recipe if you just chopped the apricots in the TMX and mixed the rest in a bowl with a spoon, but double quantity is too much for TMX to handle, I find.

I only have 200g dried apricots would i just – 50gram of each other ingredient ;D

Couldn't you just halve all the ingredients in the recipe Uni.

one of my favourites. I have run out of time and wasn't going to make anything like this ... but the logs would make it so quick!! Think I have just added some work to my to do list :D

Uni, you could probably get away with 50g less fruit if you wanted to. I dont think it would make that much difference.
Faffa - the rolling into a log makes it soooooo much easier! Just make sure you let it sit in the fridge to set before you slice it up, or else it is super sticky and hard to handle. I wrap the roll in clingwrap before putting it in the fridge to keep it moist and to keep the coconut from messing up the fridge.

These are so good . . only tweak was 90 gm rapadura milled to icing sugar - and this had just the right amount of sweetness for us. Thanks very much for posting the recipe KarenH - this is into the family file now :D :D
