Good evening all,

Just wondering if anyone here who is up with dairy free substitutes, if you have an alternative for condensed milk.  Mainly for truffles/rum balls.

Hello all. Sorry for being so quiet lately, but have been getting ready for out conference to Port Duglas and maddly makling our teams costums for out big night Tuesday night. Anywho arrived at 3 this arvo and it is SOOOOO much warmer than Wang!!!!!!! Beautiful l!  Enjoying dinner at the salsa bar tonight and hen out to the lower isles tomorrow arvo. What a life huh?

Special Diets / GF Double Choc Chip Cookies

I found this recipe in Sue Sheppards 'Gluten-free Cooking' Cookbook. This and her next cookbook called 'The Gluten-free Kitchen' are just beautiful books.  So here is my version of these & of course converted to Thermomix!


Ingredients:
110g white rice
45g raw or rapadura sugar
120g unsalted butter - room temp.
45g brown sugar
1 egg
1 tsp of vanilla extract
75g corn starch/corn flour (GF)
3 tablespoons soy flour
1/2 tsp bicarb-soda
40g cocoa powder
200-250g of chocolate chips


Pre-heat oven to 170C. Line baking trays with silpats or baking paper.
Into the Thermomix bowl add the rice and mill for 2 minutes on Speed 9. Set aside.
Add castor sugar and grind for 10 seconds on Speed 9.
Add butter & brown sugar and cream on Speed 4 for 40 seconds. Scrape down and repeat if necessary.
Add the egg and vanilla and beat again on Speed 4 for 1 minute.
Add flours, bicarb soda and cocoa powder to the butter mixture and beat on Speed 6 for 1 minute.
Add Choc Chips and mix on Speed 4, Reverse for 40 seconds.
Place large spoonfools of mixture on teh baking trays and bake for 8-10 minutes or until "golden brown" - being brown this is a bit difficult to judge so go with a nice crust evenly over the biscuits.
Leave on the trays for 5 munites and then transfer to a wire rack to cool completely.


These are the best fresh but are still nice a few days later, a little crumbly but fantastic still!

You could also use white chocolate chips, some craisons etc to vary this recipe a bit.

Recipe Requests / Italian boiled orange cake

A friend of my aunties was recently in Italy and whilst there made a Boiled Orange Cake with the Thermomix and they are desperatly trying to find the recipe here. Apparently it's different to the one in the EDC here.

Does anyone have access to the Italian version please?

Hoping someone can help me with what we would call a Cheery Praline in Australia (ie brand name)?? I'm hoping to make the Chocolate Pudding Suprise for Mothers Day. But if I can't find that I'll go for a Rolo with caramel centre instead.

200g watercress (or rocket, or spinach, I guess)
50 g parmesan
50g almonds
juice 1 lemon
3 tbsp olive oil

Blitz together

Gluten Free Bread -  by Cyndi O’Meara

Ingredients - dry
•   110g of brown rice
•   110g of white glutinous rice
•   80g of millet or quinoa
•   140g of Arrowroot or Tapioca flour
•   40g of Besan Flour
•   40g mixed seed of choice (Sesame/Sunflower/Linseed)
•   2 tsp Xanthan gum or Guar gum
•   Sachet of dried yeast (7g)
•   1 heaped tsp sea salt
•   20g of Rapadura or raw sugar
Ingredients - wet
•   400g luke warm water
•   30g Macadamia nut oil or Olive Oil
•   1tblsp Apple Cider Vinegar
•   2 eggs

Method
Add rice and millet to TM Bowl and mill for 1 minute, speed 8. Add all other dry ingredients.
Add wet ingredients to TM Bowl, and mix, speed 7 for 6 seconds.
Knead for 25 seconds, add 2 Tblsp of water and mix for 1 minute, speed 4.
Leave to prove in a warm place in lined bread tin or on a tray, free form for 20 – 30 minutes
Add seeds to top or drizzle with oil and add seeds.
Bake in a moderate oven for 30 to 40 minutes, check by inserting a skewer, when clean remove bread from oven. Cool and serve with favourite topping

Note
If you make this often it's easiest to pre-weigh & package the milling ingredients together and mill together, pre-weigh all other dry ingredients, except the sachet of yeast and package together.

Gluten Free Easter Buns


Ingredients
1 stick cinnamon
1 whole nutmeg
2 cloves
1 vanilla bean
70g millet
50g almonds
60g potato starch
35g glutinous rice flour (made in TM)
90g tapioca starch
2tsp xanthan gum
Pinch Celtic sea salt
40g rapadura sugar
35g almond oil (or nut oil)
2 eggs
130g sparkling mineral water at room temperature
1 sachet of yeast
170g craisins or other dried fruit of choice

Method
Place cinnamon, nutmeg, cloves and vanilla bean into TM bowl and mill for 1 minute on speed 10.
Add millet and almonds and mill a further 30 seconds on speed 10.
Add all remaining ingredients except craisins and mix together for 8-10 seconds on speed 6.
Add craisins and mix through for 4 seconds on Reverse + speed 4.
Lightly oil a 12 hole muffin pan (silicone preferably) and using an ice cream scoop, dollop dough into
the pan. Allow to rise for at least an hour before baking at 160ΊC for 10-15 minutes.
Cool before decorating with Cream cheese glaze (see Tips).

General Tips
To make glaze, place 20g butter, 200g icing sugar, 30g milk and 1tsp vanilla essence into TM bowl and mix
for 1 minute at 50ΊC on speed 2.
Thicken the glaze by adding 100g cream cheese and mixing for 10 seconds on speed 4.

Ok, so you all know the story behind this mousse  :-[ - says I blushing.

Having never made Chocolate Mousse or any type of mousse before I found this one really easy.  Having said that, I couldnt help but tweak the recipe a bit along the way...  :-))

TWEAKS:
The main tweak that I made was to add about 1/2 teaspoon of Cream of Tartare to the egg whites when whipping them as I'd read recently somewhere on the forum that it helps to keep the volume. I haven't had great success with egg whites in the Thermomix with egg whites before so thought anything was worth a go.  The volume of the egg whites was beautiful and held really well in the mousse.

I also added about a tablespoon of Kahlua to the chocolate mixture before folding in the egg whites, and personally I think a bit more would have brought the flavour through a little more.

I had planned on having a nice picture for you served up in a lovely teacup with fresh berries drizzled over the top, but when served it wasn't really the right time to stop for a photo oppertunity. So next time I will.

NEXT TIME:
Next time I'll still use the cream of tartare in the egg whites and could probably back off on the dark chocolate a bit as it was very rich. If serving it that same day even some berries folded through might be nice  ???

Usually I try not to make desserts because I don't have anyone else here to eat it all for me.... so I need some help please.

I'm having a guest for dinner (ok a nice guy ;) :-[) and I'll cook up a roast lamb for the main part of the meal but need some help in choosing a scrumptious dessert that will go nicely afterwards (and to be honest I want it to impress - can't believe I'm admitting to this in public  :o).

I could make the fool proof self saucing chocolate pudding, or those strawberry tarts from last years calendar (the valentines day ones).... or there's Jo's divine looking lime & kiwifruit tart with pistachio pastry...  ??? ??? HELP please.... ?

OK, so my laptop dies before Christmas, takes till nearly the end of January to hear that it'll cost $900 to repair.  :o :o >:(
After hearing that I decided to then purchase a desk top PC. After lots of issues with that, I finally got emails coming in, just not going out.... so decide that perhaps I should change over to my optus email address hoping I'd have better luck moving emails as I'd prefer to stay on the optus internet connection (and my PC wasn't recognising the wireless bigpond connection....) but I can't even log on there as my user name and password aren't recognised...... :'( :'( Then I loaded Office programs onto the computer then suddenly I can't get emails going in or out....  >:( >:(

Now, I've hooked up the printer to print off some recipes as I finally found a power point where the printer will reach and still stay connected to the computer, but I need to load the bl##dy CD for the printer program don't I..... simple enough.... BUT I've moved since then and everything related to program CD's etc is in a box somewhere between my shed or my parents shed... AGGHHHHHH!!!!!!!!!!!!!!

And lets not start on losing all my contacts, past emails with contact information, templates etc for being a consultant.... I'm fed up!
